Kitchen Creations: Augustine Farms

Time for Chef Ronnie Nasuti to join Kitchen Creations at the Hawaii News Now Studios with Grace Lee.

He wanted to feature local farmers John & Brandy Augustine who made Waimanalo their home. They are excited to share fresh, organic produce with those who also recognize the value of nutritious food and a healthy lifestyle!

You'll find some ono produce grown on their farm such as Swiss Chard, Eggplant, Basil, Beets, Cabbage, Broccoli, Daikon Radish, Easter Egg Radish, Turnips, Carrots, Kholrabi, Arugula, AND Salad Greens. Can we say yum!

Kitchen Creations w/ Chef Ronnie Nasuti of Tiki's Grill and Bar -Augustine Family Farm

We love that Chef Ronnie shared his recipes for his Grilled Hawaiian Fish.

Grilled Hawaiian Fish

Pineapple Pepper Relish, Roasted Pepper Vinaigrette, Augustine Farms Bok Choy

Pineapple rings/slices, grilled 3
Red bell pepper, grilled 1
Green bell pepper, grilled 1
Jalapeño, red, diced no seeds 2
Cilantro ¼ cup
Tea bag, Mango peach ½ bag
Red onion, sliced & grilled 1
Limes, zest & juice 3
Salt & pepper to taste

• Season & grill peppers onion & pineapples (not jalapeños) quickly for a little char & color then chill
• Dice and season with lime juice, zest, tea bag contents, cilantro, salt & pepper.
• Hold in the refrigerator for up to 3 days.

Roasted Pepper Vinaigrette

Fire-roasted red peppers (canned, with juice) 1 ½ cups
Sweet chili sauce ½ cup
Rice vinegar 2 tbsp.
Patis/fish sauce 1 ½ tbsp.
Paprika 1 tbsp.
Garlic oil (drizzle in after) ¼ cup
• Blend all ingredients in a high-speed blender until smooth.
• Refrigerate up to 5 days.

Hawaiian fish filets for grilling (I love Opah) 3.5 oz. pieces (2 per person)
Bok Choy, blanched & grilled 1 per person
Olive oil As needed
Salt & Pepper To taste

1. Grill fish fillets to medium with olive oil, salt & pepper.
2. At the same time grill the Bok Choy, lightly charring it.
3. Arrange with grilled Bok Choi & Pepper Pineapple Relish on the plate with the fish.
4. Drizzle Pepper vinaigrette & serve.
